Lead-safety Message: A Polish study found high lead and nickel levels in sushi and high levels of lead, nickel, cadmium and arsenic in nori – the red algae that is shredded, rack-dried and made into flat sheets and used to wrap sushi. None of the samples tested contained mercury. If you eat a lot of nori or sushi, ask your doctor for a blood lead series to find out if your sushi is heavy metal contaminated.
